Lots going on this week and trying to plan a menu to work around a possible trip to visit grandmother, a birthday and two days off for the man of the house. This weekend I was able to clean out and inventory all three freezers, make several jars of muscadine jelly, cook a nice roast for the freezer and to roast several bags of meat bones and get them started in a mineral and vitamin rich broth that is cooking right now. Getting that broth canned will be on the agenda for later this week.
Monday
-maple crunch muffins (from the freezer), bacon and eggs
-chicken sandwiches, carrot sticks and hummus, popcorn
-chicken with rice and gravy (from the freezer), English peas, green beans and squash
Tuesday
-granola and toast
-bean (from the freezer) tostados with cheese, lettuce, salsa and olives
-bbq (from the freezer) sandwiches, baked beans, cole slaw, corn on the cob
Wednesday
-applesauce muffins, eggs
-leftovers
-baked potato and chili (from the freezer) bar
Thursday
-caramel apple pancakes (look below for the recipe), sausage
-leftovers or sandwiches
-grilled chicken and onions, vegetable pilaf, salad
Friday-
-applesauce muffins (from the freezer), eggs, fruit
-pasta salad with grilled chicken
-homemade pepperoni and pesto pizzas
Saturday
-biscuits (from the freezer), bacon, egg, grits
-chicken noodle casserole (from the freezer), carrot sticks and fruit
-roast (from the freezer), mashed potatoes, peas, creamed corn
Sunday
-cinnamon rolls
-finger foods at church
-vegetable soup, ham and bean soup, (both soups are in the freezer) corn bread, dessert
Here is the original Caramel Apple Oven Pancake recipe that Devin made for us earlier this week. (This recipe was adjusted on the website to serve 8) Aaron even made an eggless version for himself. Both were great, except that Devin and I both thought the cake part was way too thick. This week when we make this we will keep the batter portion the same, but will double the caramel apple part and we will use a 9 x 13 inch casserole dish instead of the 9 inch-pan recommended.

Thank you for sharing your Menu. I always seem to get stuck on snacks and lunch. We eat a lot of the same things. I think my husband would eat Homemade biscuits, gravy and eggs DAILY if he could :-)
