Slow Cooker BBQ

This recipe is so very easy and makes a ton of BBQ.  My mom made this BBQ when I was growing up and it makes a lot.  She often made it to feed a youth group or choir.    I make it often to feed my large family and bag up leftovers for the freezer.  Taking it out from the freezer turns it into a fast food for those days when we are too busy to cook.

Take a whole pork loin, rinse and place in large slow cooker.  Cook on low overnight or all day.  Drain fat.  Shred meat with forks (yes, it will be that tender).  Add salt, black pepper and red pepper flakes if desired.  We also add a little vinegar.  Then add your own homemade BBQ sauce or a purchased sauce.  Stir well.

Serve on buns with sides of baked beans, potato salad, coleslaw, etc.  This is what we had for dinner last night and it is so easy and delicious!  I always look for pork loins on sale and stock my freezer with them.  One large pork loin would probably make 40 or more sandwiches.

Sounds yummy! I do pork shoulder this way. It's nice to know it works with pork loin, too:)

Thanks for sharing your summer goals. We'll be playing lots of instruments, too. My 10 yos really wants a keyboard for his birthday. Right now we have multiple kids duking it out over who gets to play the piano at any given moment. It seems someone is ALWAYS playing it- except during nap time when I joke that the piano is closed!

Africa sounds so fun to study. We'll do core 5 in Sonlight year after next and spend a year on the Eastern hemisphere. I love bringing studying to life through trips. We'll travel to DC next year after studying American History and to China after studying the East. I know they'll remember those trips and what they learn on them far better than the books we read! (Though hopefully the books will help us to understand what we experience on the trips.)

We took a good trip to Virginia (Petersburg Military Park, Williamsburg, Jamestown, Yorktown, Richmond) and DC last time we studied early American history. We were hoping to go back this year, but we won't be able to. That will be exciting to take the children to China!! Being able to travel to places that relate to your studies brings everything to life!

My father in law makes pork loin all the time, but I never have. Sounds nice and easy and yummy!
