Well, here we are in our final week before Devin's wedding. As you can imagine we are finishing up final details, putting on final touches to our wedding attire, hauling decorations, food and more to the church, decorating the sanctuary and cleaning the house. I'm trying to make our meals as simple, but as nourishing as possible as I don't want anyone coming down sick. I did buy a boxed cereal for our breakfasts on Saturday and Sunday morning. My family couldn't believe it! We needed something very quick for those two days, so there you go!!

Menu Plan for October 14-20
It seems that we are back in order here at Busy Hands Busy Minds! For the past few months I was not able to access the blog due to some changes our internet provider made, but we recently made a switch to a different provider and now we are back up! I'll save the highlights of the last three months or so for another day. If you have followed Busy Hands Busy Minds on FB (see the link in the right side-bar) you will know that our second daughter, Devin, will soon be married. In fact, we have less than three weeks to finish all the wedding prep! Yikes!! More highlights another day!

We've got lots of kitchen projects this week including canning turkey and beef broth, making butter and yogurt, canning some milk and dehydrating onions. Plus the usual piano and violin lessons with lots of extra practice time due to upcoming recitals and an overnight visit from Lauren and the grands. We've had a busy weekend with gardening, cooking, cleaning, massive amounts of laundry and a visit from Lauren and her family. I was exhausted!! Being on my feet all day Friday and Saturday really tired me out and caused lots of leg pain, so yesterday I stayed home from church and aside from washing a few more loads of laundry, I stayed in the bed or recliner all day long. Hoping to be much more productive today, though!
We do have another busy week with some plans still in the air for the later part, so my menu is not complete. I was able to buy a couple of turkeys at a great price last week, so my menu reflects that!!

Menu Plan for January 16-22
Well, the kitchen is back in order, but there are still several things that are not finished. : ( I need to touch up the paint, Jeff needs to finish up the trim work and install the new lights and that will be it....until we can get a new cabinet for the sink area. Maybe one day I will have it cleaned up when the lighting is good. I can get it cleaned and looking, oh so nice, but then the lighting is not good. We are definitely glad to be finished with most of the work, but I am already looking ahead to getting the dining room, hallway and the boys' bedroom painted this year. There is always something that needs to be worked on around here!!
Our days will be a little more topsy-turvy this week as Jeff will start filming his newest project tomorrow evening and every night next week and into the next week as well. That means he'll be home a little later in the mornings and a couple of the older ones will be gone with him in the evenings. I don't know when they will be able to eat, but I've planned a menu anyway.

I just put on a huge pot of taco soup for dinner tonight and there will be plenty to freeze for another meal or two. I love cooking large batches to have more than one meal with the same amount of work. I know there are several recipes out there for taco soup, but mine is very simple and uses mainly "real foods" meaning no canned soups or mixes. I brown about 3 pounds of ground beef with two chopped onions. I added a gallon of the pinto beans that I cooked up late last week, two cans of whole corn and two cans of Ro-Tel. I then added a gallon of tomato sauce. I will add seasonings after this has simmered for a while...about 2 each of salt, garlic, cumin, chili powder and a sprinkling of red pepper flakes. Simple, wholesome and nothing artificial!!

I just put on a huge pot of taco soup for dinner tonight and there will be plenty to freeze for another meal or two. I love cooking large batches to have more than one meal with the same amount of work. I know there are several recipes out there for taco soup, but mine is very simple and uses mainly "real foods" meaning no canned soups or mixes. I have had a few questions and comments recently about planning a weekly menu and thought I would take a moment to answer them.
1. What do you do for snacks? What are those? No, really, I don't plan much for the snack area. We generally have homemade bread or muffins on the counter and fruit in the refrigerator. I make about 2 gallons of granola every few weeks and all of these are free for the snacking. My wheat-free toddler gets gluten-free pretzels and rice cakes as well. Raisins, sunflower seeds, sliced cheddar, peanut or sunflower butters and sometimes popcorn round the selections out. Every few weeks or so one of the girls will make a batch of cookies.
2. Lunches are so hard to plan. That's what leftovers are for!! If we don't have leftovers--and I do try to cook enough to have SOME leftovers--we will have bean or beef tostados, some type of sandwich, homemade soups, hummus and veggies, popcorn, and fruit.
3. When I make extra food at one meal in order to put extra in the freezer, the family eats it all. Hide it!! Don't put it on the table. Put it in the freezer before mealtime. Threaten!!
4. What is the average cost of a meal at your house. As frugal as I try to be, I really have no idea!! We have been eating more bean based- meals recently and spread the meat thin. Meat tends to be the big expense. Devin recently made a chicken dinner for us using a pack of boneless skinless chicken breasts that I bought at a great price. There were three chicken breasts and there are eight of us at home. She cut each piece into three pieces, so that there were nine pieces. And can you believe there was a piece leftover!!! My secret to eating less meat is to eat heartier side dishes and they don't miss the meat! Or use the meat in pasta or rice dishes. With our food allergies, we tend to not eat many casseroles unless we want to cook two meals, but sometimes that is what we do. And with my boys, having freshly baked bread on the table always brings smiles.

Menu Plan for September 26-October 2
Wow!! The time is really flying by lately, isn't it? As I typed in the dates above I realized Caedmon's third birthday is just next week. Time to make plans for a celebration; although, each day with Caedmon is a celebration of sorts!! ; ) Today he sang "You Are My Sunshine" about 15 times on the way home from church...no kidding!!
This week we'll be eating out of the freezer or home canned goods a good bit. And to help cleanups go a little faster, we broke down and bought paper plates. It's just taking so much time out of our day to get the kitchen cleaned up, so maybe the paper plates will help. We'll see! Here's what's on the menu for this next week:

Menu Plan and More
Things around here have been a little off track with Jeff and Jordan working up to 18 hours a day last week ...only coming home for a bath, a fresh change of clothes and a very few hours of sleep. This week is more the same for them and Devin also will be working an extra day away from home.
Last week my menu was made with thoughts the Jeff and Jordan would be home for dinner a couple of nights...which was so not happening! After cooking two big meals on Monday and Tuesday I only cooked one other meal for the week which was a big pot of chili. Needless to say, we ate several meals of leftovers, one meal of take-out and two meals of sandwiches with store bought bread and sandwich meat...a very rare happening.
Jeff brought home a large dish of hamburger steaks leftover from Saturday's big meal for the film crew. The children ate some of that last night along with lots of vegetables while Jeff and I went out to dinner to celebrate our 28th wedding anniversary which is today! There is still a good bit of the meat left and lots of veggies, so that will be dinner tonight.
For the remainder of the week I will cook what didn't get prepared from last weeks menu....spaghetti (I will make a big pot of sauce and either freeze or can what is not eaten), bbq sandwiches (again making a large amount and will freeze some), a dinner of beans and cornbread and we'll probably grill out chicken again on Saturday when the guys will finally be home and finished with the filming.
In other kitchen news, we will be making bread, applesauce, granola and cinnamon rolls this week and I hope to get all the carrots in my refrigerator dehydrated as well. Piano lessons, violin lessons, science, history, geography, lots of reading, math and more need to be accomplished on the school front while the usual laundry and household chores also need attention. Lots to do as usual so I best get started!! Hope you all have a blessed and busy week!

A few weeks ago I came across a mock cheesecake recipe and knew my newly turned 15 year old son would love it. He is extremely allergic to eggs, so desserts for him can sometimes be a challenge. He liked the cheesecake, but some of the others thought it was a little more Jello-y than we cared for. I made some adaptations when I made it again for his birthday dessert and we all loved it. In fact, the kids loved it so much that I only got one piece out of a 9 x 13 pan. I do not normally use Jello or Cool Whip, but on occasion I make concessions.
Lemon Jello Cheesecake
Take one sleeve of graham crackers. Crush in the blender and add 1/4 cup melted butter. Press into a 9 x 13 casserole dish.
Mix one large tub of Cool Whip, one softened 8 ounce bar of cream cheese, 1/3 cup lemon juice, 1 can condensed milk and two small boxes of lemon jello. Beat until smooth. Pour over graham cracker crust and chill until firm, about 2-3 hours.

*make bread

-Lunch-pasta salad, potato soup
-Dinner-pork tostadas with refried beans, chopped tomatoes, onion, cheese, sour cream and salsa
*mix up applesauce muffins
Wednesday
-Breakfast-applesauce muffins, scrambled eggs and grits
-Lunch-popcorn, grilled cheese sandwiches
-Dinner-French onion soup or potato soup, rolls

Menu Plan for August 15-21 and a Beefy Bean Casserole Recipe
Sometimes when I sit down to plan out our weekly menu I just draw a blank. Tonight was one of those times. So, I got on FB and asked for help and boy, did I get it. Here is our menu for this week, but I am making a list for the weeks to come. Please check out the links for the highlighted items to get the recipe and check the bottom of the post of a new recipe that was sent in tonight! We're having it on Saturday!
And now that it's cooled down a little bit (only 87 for a predicted high tomorrow!) I plan on cooking up several batches of grilled chicken breasts and hamburgers for this week and for the freezer.
Monday-
breakfast-biscuits or pancakes from the freezer, grits, scrambled eggs
lunch-grilled cheese or pbj sandwiches, tomato/macaroni soup, popcorn, raw veggies
dinner-grilled lime/garlic marinated chicken breasts, pesto pasta salad, glazed carrots
*thaw two packs of chicken breasts
*thaw pork roast
*make up a big pot of veggie rice pilaf for Caedmon
*mix up applesauce muffins
Tuesday
breakfast- applesauce muffins, bacon, eggs
lunch-refried beans with corn tortillas, cheese, salsa and sour cream
dinner-pork roast with spicy peach glaze, roasted potatoes and winter squash, English peas
*thaw refried beans
*mix up baked oatmeal
Wednesday
breakfast-blueberry baked oatmeal and toast
lunch-leftovers, popcorn, fruit
dinner-grilled burgers, oven fries and raw veggies
*thaw previously cooked burgers
Thursday--Jackson's 7th birthday and he chose the following menu
breakfast- Poptarts
lunch-pizza rolls and fruit
dinner-at a favorite Mexican restaurant followed by an ice cream cake at home
*open box and heat--LOL
Friday
breakfast-pancakes and sausage
lunch-cheese, popcorn, raw veggies, sunflower seeds, olives, fruit
dinner-homemade pizzas and dessert

Pinto Bean Casserole
This recipe came via the internet from a friend of long ago. She includes some suggestions as well. I am eager to try it out!
1 to 1 1/2 lbs ground beef
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 clove garlic
1-15 oz can tomato sauce
2 teaspoons chili powder
1 teaspoon salt
1 cup cooked rice
1-15 oz can pinto beans (or 1 1/2 cups cooked)
1 1/2 cups cheese
Cook beef, onion, bell pepper, and garlic. Blend in tomato sauce, chili powder, rice, and salt. Layer part of meat sauce, beans, half of cheese and remainder of meat sauce. top with cheese. Bake at 350 degrees F for 15-20 minutes. Let stand for a few minutes.
This makes a wonderful freezer meal. I usually freeze everything but the cheese in a gallon ziploc bag. Then layer the cheese after it thaws. We have also eaten this just like chili and just sprinkled cheese on top. This originally called for cheddar cheese, but we like it better with provolone or the four cheese Mexican mix.
