Menu Plan and More

Things around here have been a little off track with Jeff and Jordan working up to 18 hours a day last week ...only coming home for a bath, a fresh change of clothes and a very few hours of sleep.  This week is more the same for them and Devin also will be working an extra day away from home.

Last week my menu was made with thoughts the Jeff and Jordan would be home for dinner a couple of nights...which was so not happening!  After cooking two big meals on Monday and Tuesday I only cooked one other meal for the week which was a big pot of chili.  Needless to say, we ate several meals of leftovers, one meal of take-out and two meals of sandwiches with store bought bread and sandwich meat...a very rare happening.

Jeff brought home a large dish of hamburger steaks leftover from Saturday's big meal for the film crew.  The children ate some of that last night along with lots of vegetables while Jeff and I went out to dinner to celebrate our 28th wedding anniversary which is today!   There is still a good bit of the meat left and lots of veggies, so that will be dinner tonight.

For the remainder of the week I will cook what didn't get prepared from last weeks menu....spaghetti (I will make a big pot of sauce and either freeze or can what is not eaten), bbq sandwiches (again making a large amount and will freeze some), a dinner of beans and cornbread and we'll probably grill out chicken again on Saturday when the guys will finally be home and finished with the filming.

In other kitchen news, we will be making bread, applesauce, granola and cinnamon rolls this week and I hope to get all the carrots in my refrigerator dehydrated as well.  Piano lessons, violin lessons, science, history, geography, lots of reading, math and more need to be accomplished on the school front while the usual laundry and household chores also need attention.  Lots to do as usual so I best get started!!  Hope you all have a blessed and busy week!

So busy! We did the big pot of chili too and were able to get a few meals out of it...there's something about leftovers in the fall! :)

Sure hope that you had a great Anniversary celebration dinner date! Sounds like you are doing just what you need to do with meals...isn't that the beauty of having things frozen and on hand...you do what you need to do! :D

Sorry I haven't been around much lately...I think we are almost all well now. Thanks for your encouragement and prayers, friend!
